  • 150 g all-purpose flour
  • 120 g salted butter
  • 30 cl water
  • 5 eggs

  • 3 slices of smoked salmon
  • 250 g fresh cream cheese or fromage blanc
  • 1 lemon
  • A few sprigs of dill
  • Salt and freshly ground pepper

How to Make Smoked Salmon Éclairs

Step 1: Prepare the Choux Pastry

  1. Heat the water in a saucepan and melt the butter into it. Stir well.
  2. Bring the mixture to a boil, then remove from the heat and add the flour in one go. Stir vigorously until the dough pulls away from the sides of the pan.
  3. Cool the dough by placing the saucepan in a bowl of ice water.
  4. Beat in the eggs, one at a time, mixing thoroughly after each addition. The dough should be sticky and smooth.

Step 2: Shape and Bake the Éclairs

  1. Preheat the oven to 180°C (350°F).
  2. Line a baking sheet with parchment paper.
  3. Using a piping bag or a spoon, form small éclair shapes on the baking sheet.
  4. Bake for 15 minutes, or until the éclairs are golden and puffed up. Allow them to cool completely.

Step 3: Prepare the Filling

  1. Dice the smoked salmon into small pieces.
  2. Squeeze the lemon and reserve the juice.
  3. Wash, dry, and finely chop the dill.
  4. In a bowl, mix the cream cheese, smoked salmon, and dill. Gradually add lemon juice, tasting as you go to balance the flavors. Season with a pinch of salt and some freshly ground pepper.

  1. Once the éclairs have cooled, carefully slice them in half lengthwise.
